October is Vegetarian Awareness Month!
Eating vegetables for lunch and dinner is common. How about eating vegetables for breakfast? Some breakfasts are easy to incorporate veggies into and we don’t think twice about it. Yet, there are options that we might not consider your typical breakfast meal and are an easy way to get in a serving or two of veggies.
Here are some ideas for you to consider to up your vegetables with the first meal of your day. Some you may be familiar with and others may be something you had not considered.
Smoothies or a “Green” Drink
- Add veggies to your morning smoothie – kale, spinach, collard greens, swiss chard, romaine, green leaf lettuce, red leaf lettuce,
- Stir some greens powder into water to get a blast of veggies and have this with something more substantial
Eggs (scrambled, omelet, frittata) or Tofu
- There are so many veggies you can add to eggs or tofu:
Bell pepper Mushrooms Spinach Nopales Broccoli Onion Tomato Yellow squash Butternut squash Kale Sun-dried tomato Zucchini - Up your veggie intake by adding salsa and/or using collard greens as a wrap for a breakfast burrito.
Salad – Your typical salad is just fine for breakfast. One of my favorite dishes is to put basted eggs on top of my salad with some salsa. Super yummy!
Muffins / Pancakes / Toast w/spread – Create unique muffin or pancake recipes by using leftover sweet potatoes or pumpkin. Spread some sweet potato mash on toast. Have a veggie sandwich.
Fruit & Veggies w/Dip or Yogurt – Instead of just doing fruit, like an apple, do less fruit and include celery and jicama.
Leftovers from Last Night’s Dinner – Who says leftovers are only for lunch or dinner? No reason you can’t enjoy some of those leftover dinner veggies to start your day!
